ORIGIN

Coffeelipe is the new brand used by Juan Felipe Restrepo under which he carries out his new fermentation protocols with cherries from different farms and regions. Coffeelipe is a modern processing plant based in Finca Chambaku equipped with a laboratory, bioreactors,
fermentation tanks, mechanical silos and a greenhouse with 2 level drying beds.
This is the seventh year developing experiments where more than 1000 different protocols have been carried out.

PROCESS

Manual picking of only ripe cherries. In the afternoon the cherries are put through foaters process to eliminate the less dense cherries and remove foreign elements such as leaves and sticks. Afterwards starts a 14 hours oxidation and the next morning a manual selection is carried out with women to guarantee that the cherry mass is as homogeneous as possible.

The fermentation process starts with an anaerobic fermentation in a bioreactor for 125 hours. It is a lactic process with the addition of yeast that is constantly recirculating , looking for a more homogenous fermentation in the entire mass. The cherries are nally dried in mechanical silos for 3 days.
EP preparation with 95% above screen size 15. With a moisture level of 10.4% and water activity of 0.58.
