ORIGIN

During the second half of 2023 we have given a complete spin to our decafeination process. After perfecting the milling process and the physical characteristics of the raw material that we sent to the decaffeination plant, we found that the moisture parameters recevied after the
decaf process did not convince us, we decided to redry the coffee in mechanical silos, finding that this helps to stabilize the coffee in profile and shelf life. We ended up finding a more sweet, balanced cup which is more expressive.

DECAF PROCESS

For the decaffeeination process, the factory uses high mountain spring water and ethyl acetate extracted from sugar cane. This last one is a selective solvent for caeine, which is present in nature (in yellow fruits such as bananas).

It has two important drawbacks: it is highly flammable and has a specific sweet odor. Its handling is therefore quite delicate, which affects
production costs and, normally, gives the coffee treated with this extract a diferent smell and slightly altered cup of coffee. This decaffeeination process guarantees a minimum caffeine extraction of 97% and a residual solvent residual of maximum 20 PPM. The Moisture level is of 11%.
