Farm
Finca Buena Vista is located in Las Camelias region of Nueva Segovia department in the very North part of the country bordering Honduras. Located in elevation between 1200-1400 m.a.s.l, 51 acre farm is managed by JAMIR JOSUE GARCIA AGUILAR, who is young inovative 27 year old farmer. Previously his father was producing coffee using tradictional farming methods, but after Jamir got married father passed him part of the farm so he can manage it his way. -Since then I put a lot of effort to bring great results in both production and quality. I don’t stop improving on the way to make great coffee which every consumer can drink with joy! , Jamir says.
Variety & Processing
It’s Red Catuai variety, a compact plant with high yielding potential of standard quality in Central America. It was processed using washed fermentation method. Blood red cherries were handpicked and brought to washing station were floaters were separated. After depuling skins, beans with the mucilage are placed to the fermentation tanks for 72hour period, after fermentation when mucilage is totally removed parchment benas are transfered to “african beds” for drying which takes 28 days in the in the shadow. Washed fermantation and slow drying result in longer shelf life of coffee, at the same time produces crisp clean and balanced cup.
