Ethiopia is Motherland of coffee and very colorful coffee origin, because great climate conditions and high altitude it produces some of the best coffees in the world with their on distinctive character.
This Shakiso Natural comes from the Shakiso district in the Guji Zone, about 530 km south from Addis Ababa. Guji is one of the zones of the Oromia Region of Ethiopia which is named after the Oromo tribe. The farms there are small and located in the shadows of evergreens that provide a multi-canopy structure. They are owned by families born and raised in the area who have years of coffee experience and a wealth of knowledge to draw on passed down from generations of growers.
The Shakiso region’s volcanic soil is bursting with nutrients, creating a deep red and brown top-layer of soil. The regions’ high altitude, bimodal rainfall pattern, and dry weather allow coffee cherries to develop slowly. Typically farms utilize shade (acacia and other indigenous trees) to protect the coffee trees. They also create their own compost to fertilize organically. This allows a natural growing process to produce oustanding coffee beans of the highest quality. Only the red-ripe coffee cherries are picked, carefully sorted, and moved to the drying beds. The drying can take between 12–20 days, depending on weather conditions. The drying process is carefully monitored in order to guarantee a unique flavor and outstanding quality.
This coffee is fruity and sweet, with notes of blueberries, strawberry jam, peaches and levander.
