This beautiful Colombian coffee comes from farm La Florida which is a part of OPCE (ORGANIZACIÓN DE PRODUCTORES DE CAFÉS ESPECIALES), it is produced by César Llantes.
César Llantes is an experienced producer from Huila. About 10 years ago he started
transforming his small 4,5 hectares family farm renewing coffee trees and planting pink
bourbon trees. Nowadays, he is one the most experienced and reknown p. bourbon producers
in town and has shown the new generations that there can be an alternative way of producing
coffee which is payed better. Huila concentrates almost 3/4 of the P. Bourbon produced in
Colombia as the variety has adapted very easily to the conditions in the region.
Manual picking of only ripe cherries. After the cherries are received at the beneit, starts a
floaters process where the less dense cherries are taken out as well as sticks, leafs and other
external elements. Then, it goes through an anaerobic fermentation process of 96 hours in
Grainpro bags and then depulped and put to ferment in tanks for antoher 12 hours in an
Sun dried for between 12 and 15 days in greenhouse patios. Coffee parchment is extended on
the floor and constantly turned around so it can dry evenly and helping coffee to dry faster.
