Located at the heart of the Colombian coffee triangle, Finca el placer is in between Chinchiná and Villamaria starting at an altitude of 1.600 meters above sea level and with steep hills going all the way to 1.800 meters. It is a small 4,5 hectares farm that is a part of Hacienda el Jardin property of Don Alvaro Naranjo, third generation of coffee producing family owning the farm. Looking for an increase in quality and
productivity they have implemented new protocols for cleaning, fertilizing, picking and benefit process at the Hacienda and also searching for specialty coffees with personality. This Natural process coffee has been developed by Wilson Arboleda, one of the workers in charge of the benefit facility where the most complex coffees of the farm are produced.
Farm gives priority to the coffee trees inside the farm where temperature and moisture are ideal for sugars to develop. The lot chosen goes through an exhaustive picking process picking only overripe cherries (17,5 and 19,5 brix degrees) that are then put through a floaters process to eliminate the less dense cherries and finally start an anaerobic fermentation of 18 hours.
After that, coffees are taken to the drying facilities for a 5 day drying on African beds and finally taken to mechanical silos. It is finally stabilized for 45 days in a controlled environment till moisture level reaches 11,1%.
